When we went on vacation, my Dad picked-out the seediest of eating establishments. Some should have been shut-down by the Board of Health. Others, however, produced incredible fare. What follows is my attempt to recreate an "entre" from a cheap dive in Virginia - near Williamsburg. Steak sandwiches served over fries in red baskets - with no silverware available!
Preheat the broiler. Prepare the steak and fries simultaneously.
Sprinkle a self-desired amount of salt, pepper, cayenne pepper, garlic powder and onion powder over the steak pieces. Dust each in flour. With a kitchen mallet, pound the steak into a 1/8" - 1/4" thickness.
Over medium heat, heat up a non-stick skillet (or a griddle). Add butter and/or oil. Fry the steaks until they are medium-well. Remove the steaks, place them in the rolls - along with a small ladle of pizza sauce overtop. Top them with sliced mozzarella cheese. Pop the sandwiches under the broiler until the cheese barely melts. Place the fries in the baskets, then steak sandwiches over the fries.
