Goose fat potatoes

1 lb potatoes
3 Tbl goose, duck or bacon fat
black pepper
The potatoes may be peeled, if desired. Carve the potatoes into 1" thick half-moon shapes.

For best results, use an electric fry pan. Heat the fat to 325-350 degrees F. Place the potatoes into the fat. Salt them down. Fry for about 20 minutes, turning occasionally with a metal spatula. Finish them with a good dose of black pepper.

Goose fat can be purchased online for $3.50 per 1/2 lb. From what I can tell, French goose fat is no longer legal in the US.
