Smoked chicken

1 whole chicken, about 3 1/2 lbs
Uncle nek's red delight or The Frugal Gourmet's BBQ sauce
dark brown sugar
Preheat the smoker. If possible, use mesquite chunks as the smoke-delivery medium. Rub the chicken with a quantity of salt and dark-brown sugar to your liking.

Smoke the chicken at 220 degrees F for about 5 hours (or until the internal temperature registers 165 degreees F). Allow the chicken to rest tented for 10 minutes.

Before the chicken is finished, prepare the one of the above sauces. Hack the chicken into pieces and serve with one of the above sauces.
