Texas pit sauce

The recipe - below - is an excellent BBQ sauce for ribs, chicken and brisket. It's perfectly balanced for heat, tartness and sweetness. Slather some of it onto your ribs, and you'll be transported to the "Texas of the mind".

1 cup ketchup
1/4 medium onion, grated
1 clove garlic, minced
1/8 - 1/4 cup worcestershire sauce
1-2 oz fresh lemon juice
1/2 - 1 Tbl molasses
1/2 Tbl malt vinegar or cider vinegar
1 Tsp prepared brown mustard
1/2 Tsp ground chile d'arbol pods
1/2 Tsp Tabasco sauce
1/4 Tsp dried thyme
salt to taste
Combine the above ingredients into a non-reactive sauce pan. Bring the contents of the pan to a boil, then cut the heat to a very slow simmer until it is relatively thick.
