North Carolina BBQ sauce

1 cup + 3 Tbl apple cider vinegar
1 cup ketchup
1/4 cup dark brown sugar
1 Tbl Tabasco sauce
1/4 - 1/2 Tsp red pepper flakes
1/2 - 1 Tbl salt
black pepper (lots)
Combine all ingredients into an old vinegar bottle with a funnel. Shake the bottle, vigorously to combine. Store in the refrigerator a few days before using - to help the flavors ripen up. This sauce excels as a slathering sauce for pulled-pork and as a baste for smoked or grilled chicken.
